Easy Egg Muffins

 4 large eggs (or liquid egg white substitution)
 4 bread slices
 4 cheese slices
 ham slices (or canadian bacon, bacon, sausage patties or links)
 cooking spray
 spray butter or regular butter
 salt / pepper

If you have an egg pan like this (https://amzn.to/2T3Dsmg), you will first spray the egg slots with a cooking spray.
- If not any large non-stick pan with a lid will work along with 4 canning lids or metal biscuit cutters... & again spray with cooking spray.

If using another breakfast meat choice other than ham - start this in a separate pan according to directions now.
TIP* If preparing 2 at a time, you can use 2 of the egg slots for the eggs & 2 of the egg slots for a ham to heat thru so that all items are ready at the same time.

Break 1 large egg into each prepared slot (or substitute liquid egg whites). Poke the yolk & turn to break. Then pour water in the middle of the pan, careful not to get any into the egg slots. Cover with the lid and turn the heat to medium to steam / poach.

Quickly get the muffins started in the toaster. *If you start them both at the same time, when the muffins are ready - the eggs will be perfectly cooked also. When plating the muffins, immediately spray with spray butter to soften.

Check the eggs after the steam has been rolling for at least a minute. If all eggs look firm & not runny - then they're ready. Remove from heat & go around the edges of the eggs with a small rubber spatula to free from the pan.

Now layer on the bottom muffin piece - cheese slice, meat, egg. Salt & pepper the egg to your liking, and top with the upper muffin piece. *TIP - wrap these in little brown wrappers to go and your looking legit!
